Saturday Morning Deliciousness.....
This pancake recipe is a slightly altered version of the one that appears in Anne Lindsay's Light Kitchen cookbook, which I highly recommend.
Banana Blender Pancakes
1/2 cup all purpose flour
1/4 cup cornmeal
1/2 cup whole wheat flour
1 tbsp sugar
1 1/2 tsp baking powder
1 cup low-fat milk
1 tbsp vegetable oil
Dump everything in the blender and mix it up.
Cook the pancakes (you know dump on the pan, wait till it bubbles then flip).
I like to serve these topped with peanut butter and maple syrup.
